2023年5月8日,格鲁吉亚政府网站发布第174号条例,制订了
牛肉
屠宰
生产过程中使用
乳酸
控制
微生物
污染的规则,将于2030年1月1日生效。主要内容包括:
(1)规定了牛肉屠宰生产过程中使用乳酸以控制微生物污染的程序,乳酸溶液须由符合添加剂
法规
的乳酸制备,仅通过喷洒方式,适用于牛完整胴体、二分体和四分体;
(2)乳酸使用不超过55℃的饮用水配置,浓度2%-5%,在受控及可追溯前提下使用,不得应用于可见粪便污染的胴体,使用不应导致肉的不可逆转的物理改性;
(3)使用过程纳入CCP点管理,乳酸溶液浓度应定期监控验证,溶液温度应使用仪器连续监控,利用该工艺生产的产品,屠宰企业应通告后续的食品生产经营企业。
